Baked Portobello Mushrooms

From Linda McCartney on Tour, Bulfinch Press

4 Portobello or large flat mushrooms, stems removed
4 Tbs. olive oil
Juice of 1 lemon
1 clove garlic, chopped
2 tsp. dried thyme
1 lb. spinach leaves, blanched, chopped, and excess moisture squeezed out.
1/2 lb. vegetarian Camembert, Brie or 1/4 lb. goat's cheese
Sea salt and black pepper to taste

Pre-heat oven at 350 degrees.

Place mushroom in a baking dish. Mix the olive oil, lemon juice, garlic, and thyme together, and spoon the mixture over the mushrooms. Bake them in the oven for 10 minutes at 350 degrees.

Top with the spinach and cheese, and season with salt and pepper. Place under a pre-heated grill until the cheese has melted, for about 2-3 minutes.

Keckler's Komments:

This is a good standby when I don't have time to make a Magnificent Mess in the kitchen. For a light but filling meal, I make four of these -- two for me and two for Mathra -- and serve with a tiny simple salad of greens and nut oil.
